Caviar Box - Do it yourself (Plexiglas)
Some people had a funny discussion about the popular Caviar Box of 100% chef. You can follow this discussion in French by clicking on this link http://fr.molecularcuisine.org/forum/sho...php?tid=9.
Summary of the chat: Some people were asking if it was worth buying an utensil for making 96 alginate pearls (fake caviar) at once. This molecular cuisine utensil works well and is very useful when you need to make a significant amount of fake caviar. Nevertheless the caviar box is expensive (approx. EUR 100) and the first version of the caviar box can not be opened and cleaned properly. A new version of the caviar box was launched recently with plastic screws which allows for an easier cleaning. A piece of advice: when you want to buy the caviar box of 100% chef, make sure to buy the new one! A Molecularcuisine.org member posted his own "caviar box". The system is different and less complex than the 100% chef caviar box but it is hygienic and easy to clean. Here is a picture and the plan of Chef Fabian's caviar box (working in the Trump International Sonesta Beach Resort). Home made_caviar_machine.doc (Size: 26 KB / Downloads: 95)
And hereunder are the pictures of a guy who experimented with Plexiglas folding and drilling in order to create his own caviar box machine. Have fun! |

RE: Caviar Box - Do it yourself (Plexiglas)
Funny post! Never thought about it! Unfortunatly I am not really good in doing it yourself.
Can you also buy this caviar box machine on internet? Is it cheaper than the 100% chef caviarbox? |

Congtac,
Yes, you can buy this kind of caviar box but then it is less fun ![]() - look at the German TexturePro site : EUR 180 ! excl. sending cost. - MCC shop used to sell one made of metal for approx. EUR 120 but it seems they are not selling it anymore. Admin |

Great info!
I have worked before with composite materials, and plexi glass is one of them. I will keep this in mind for future banquet orders. C.C. |
