Trehalose
Has anyone here heard of Trehalose?
It's a sugar alternative that was first introduced by a Japanese Company, Hayashibara. Interesting ingredient, I would say. Especially when used in savory products. It is said to "increase the water-holding capacity of cooked meats" and "act as an effective cryoprotectant for surimi" if you need freeze/thaw stability. Although less sweet than sucrose, its reduced cariogenicity "can be used to formulate ‘kind to teeth’ or ‘toothfriendly’ products either as the sole bulk sweetener or in combination with other low cariogenic bulk sweeteners." Advantage of using this as compared to commercial sugar alcohols like sorbitol and mannitol is that it does not have the additional "cooling" effect nor does it gives you flatulence when consumed in large quantities. Thanks for this information. We saw some month ago a recipe in a German book frying schimps in Trehalose and this rang a bell to us http://fr.molecularcuisine.org/forum/sho...hp?tid=44. It is obvious the purpose to fry with Trehalose is to avoid the usual smell of frying. Admin |

Trehalose
Hello,
I am Jean.I have read your post.Trehalose is a food product which hasn't been available retail in the US before. The dose we use in HDDW trials is 25 gms three times a day. The price they quote means about $1/day. Though our numbers are small, the trend in our trials suggests that trehalose is helpful at all stages of HD,but the earlier the better.If you use this I recommend you start with 10 grams a dose and work your way up. Unfortunately about 25% of HDDW participants had diarrhea.I think it is ok, even good, in diabetics. Its use resulted in better control of sugars in one of my Huntington's patients. Thanks. |
